Chocolate Cake For Eid PDF Print E-mail

Here is a delectable Chocolate cake made for 'Eid, by Zulekha (13), Amina(12), Maryum(11), Tahirah(10), Zainab(6) and Areeba(9).  This was the winning recipe entry for the Marhaba.net.nz Ramadhan Competition!

Yummy Chocolate 'Eid cake

Ingredients:


oil for greasing the tin
125 grams of self raising flour
pinch of salt
45 grams of cocoa powder
165 grams of butter
165 grams of caster sugar
3 eggs
3 - 4 drops of vanilla essence
3 table spoons of warm water
(We doubled the above ingredients for a larger cake!!)
 
1 Heat the oven to 180~C
 
2 To prepare the cake tin, place the tin on top of some baking     paper, draw around the tin, then cut out the circle of the paper.
Brush the insides of the tin with some oil, or wipe it with an oily paper towel, then place the circle of paper at the bottom of the tin.
 
3 Sift the flour, salt and cocoa powder into the bowl.
 
4 Melt the butter in a saucepan over a medium heat.  Remove form the heat and add the sugar, eggs and vanilla essence, then stir with a wooden spoon until combined.
 
5 Pour the butter mixture into the flour mixture and stir until completely combined.
 
6 Add the warm water and stir again.
 
7 Pour the mixture into the prepared cake tin, using the spatula to scrape the sides of the bowl.
 
8  Place the cake tin on the oven tray on a rack in the centre of the oven and bake for about 25 minutes, then test to see if it is cooked by insert a skewer or sharp knife into the middle of the cake; if it comes out clean then the cake is cooked.  When the cake is cooked, remove it from the oven and place the tin on a wire rack to cool.
 
9 When the cake is cool, slide the blade of a knife between the cake and the inside edge of the tin and drag it against the tin to loosen, taking care not to cut the cake.
 
10 Tip the cake tin upside down onto the wire rack, lift the tin off  and leave the cake to go cold.
 
We iced the cake with chocolate icing.
 
Chocolate Icing
 
Ingredients
2 cups of icing sugar
1 tablespoon cocoa powder
1 table spoon of very soft butter
3 tablespoons of warm water
 
1 Sift the icing sugar and cocoa powder into a bowl
 
2 Add the butter
 
3 Add half of the warm water and stir until well combined.  Gradually add more water until the icing is runny enough to spread.
 
4 Spread the icing on the top of the cake with a knife and leave to set.
